Yield: 1 9" pie
Ingredients:
36 Werther’s Soft Caramels or other brand
1/4 cup water
1/4 cup butter cut into cubes
3 large eggs
3/4 cup white sugar
1/8 tsp. salt
1 1/3 cups toasted and chopped pecans
1 unbaked 9" homemade Vermont Rolling Pins Shortcrust Pastry pie shell
Top with Vanilla Ice Cream (optional)
Directions:
Preheat oven to 350 degrees F. On stove top, combine
caramels, water, and butter in saucepan. Melt ingredients over
low heat, stirring constantly took keep from sticking to the bottom
of the pan. Once ingredients are melted together, remove from
heat and set aside.
Use mixer to beat eggs, sugar, vanilla, and salt together until
creamy. Next, add pecans and stir in the melted caramel. Make
sure to mix ingredients well. Pour mixture into the 9” pie shell.
Carefully place pie in preheated oven (being careful
not to spill!) for 35-40 minutes. Let cool before serving.
