Prep time: 15 minutes
Cook Time: 30 to 35 minutes
Serves 4 people with a side salad.
Ingredients:
9" Piecrust-homemade or store bought
2 Tbsp Butter
1 Yellow Onion, chopped
1 Tbsp All Purpose Flour
2 cups Grated Cheese (1 cup Cabot Sharp
Cheddar and 1 cup Gruyere)
3 large Eggs
1 cup half and half
1/2 tsp salt
Directions:
If making homemade pie pastry, make and
refrigerate for at least 30 minutes. Skip this direction, if
store bought. Preheat oven to 400 degrees F. Melt butter in
pan over medium heat. Sauté chopped onion until
translucent for about five minutes, stirring occasionally. Put
aside, roll out pie crust and place in 9” pie plate, make
edging. Spread sauteed onion evenly at bottom of pie
crust.
In a bowl, mix shredded cheese with flour. Then spread
over onion that is in the pie crust.
In another bowl whisk eggs, half and half, and salt
together. Pour mixture over the shredded cheese in pie
crust.
Bake for 10 minutes. Lower oven to 325 degrees F and
bake for another 30 to 35 minutes. Or until a knife inserted
in the center comes out clean.
Cool pie for ten minutes.
